It's been quite a while since I added a recipe here. I guess I haven't had that much time for baking. But last week I bought an amazingly good cake in a shop in Tallinn and I decided to try to make my own.
It has a meringue topping, vanilla flavored dough and a mix of fruit, sour cream and whipped cream filling.
Ingredients:

- 4 eggs
- 200g flour
- 200g sugar
- 200g butter or margarine (but butter tastes best)
- 1 tsp baking powder
- 2 tsp vanilla flavor
- 3 egg whites for the meringue
- about 200g fruit, I mixed strawberries and forest berries
- 3 sp sour cream
- 200ml cream, to be whipped
Separate the white part of the 4 eggs and whisk them with the sugar. The add the melted butter, then the flour and baking powder and at last all the egg yolks you have (4+3 from the meringue topping).
Pour the dough into a cake baking tin. For the cake to not stick to the tin, you can butter it first and sprinkle some flour over the butter. Bake in preheated oven, about 180-200°C for about 20 minutes.
Then take it out and let it cool.
In the meantime you can mix the fruit with 3 large spoons of sour cream and some sugar, to taste. In a separate bowl, make the whipped cream.
When the cake has cooled, cut it in half, or 3 if you prefer. Place the top part on baking paper and spread the mix of 3 whisked egg whites on top of it. Put in the oven for about 10 minutes, in 200-225°C, until it is golden.
Mix the whipped cream with the fruit and sour cream mix, carefully, with a spoon. Spread the mix on the cake layers and cover with the top meringue layer.
Keep it in the fridge!
